Where can I buy a MP3 service manual, not a CD or download, but actual book?

Called Pepboys and Autozone and they say there no service manual for a Mazda Protege 2001 even.

Try the dealership or ebay. There isn't a mp3 specific manual its just a universal for all models but will break things down inside for each model such as motor size, maintenence, etc.

He's right though, there isn't a printed version of the 2001 since it is too similar to the 99-00 one...
I'd personally just print out the service manual everyone here uses, unless you prefer the text-style of a Haynes manual.
