Would a custom exhaust shop be able to mate 2.5 inch piping on my 2 inch ID flange?

err...that's iffy.
i know they could do 2.5 to 2.25 flange, or 2.25 to 2 flange, but a .5 inch diff is fairly large.
best bet for a solution would be to just call up a shop and ask over the phone. it's def. something they could answer for ya right quick.

negative....the bolt holes on a 2.0 flange sit exactly where the 2.5 id hole ends....actually had to explain to a few people that wanted to put our 3" midpipe on the stock msp exhaust....biggest you can do without using a reducer, which defeats the purpose, is .25 bigger and even that is a tight fit.....please remember that an exhaust system only flows as well as its smallest part so 3" exhaust doesnt do you any good if the 2ft infront of it are 2"....

I guess I will never no if they could of or not since I went a different route. (shrug)

well like i said you can do it if you use a reducer to the flange...

if you're going from the donut flange back then yes it is possible, I assumed when you said 2"ID flange you meant a regular flange...the donut connection is a flared end so its can be reduced quite easily...
