would an aem f/ic be suitable? or do we need to use like a full standalone like a megasquirt or a hydra?

piggy back systems don't really allow you to "map" your ecm.
standalone systems allow you to tune your ecm

i thought a standalone was a replacement for the ecm, and a piggyback leached off the harness and modified values. wouldnt a aem f/ic or greddy blue box be suitable for this, just like any other car?

all a piggyback does is change things to set parameters. it does allow change you are absolutly correct about that but generally its the lazy way of doing things, or its part of a turbo kit. in my opinion if someone is going to spend the time money and effort modifying there car, it should be done right. to me a piggyback is a short cut that limits what you can achieve.
