Can someone please point me towards why is good to know exhaust gas temps??

EGT temps can be a good indicator of the quality of your A/F mixture and other things...if you know how to interpret them, and I'm not going to claim to be an expert on that subject.
For example, my neighbor has a late model Dodge turbo-diesel truck. He upped the boost, and his EGT's went near 1500. Some studying on the matter told him that his factory exhaust was too restrictive and causing too much reversion, so he made a significant upgrade in size. His EGT's dropped down to 1200-1300 deg. My guess is the gauge can help, but only if you know what to look for and why.

A single EGT gauge won't really help with tuning a whole lot. You're better off spending the money on a datalogger that logs timing IMO. The EGT gauge will help show you when things are getting too hot and when to back off timing though.
