Do they make a chip for the P5 and if so is it really worth the money? Are the gains really noticeable or is it really a waste of cash?

1. yes.

2. NO.

Get yourself a mp3 ECU or standalone computer management if you want to upgrade that aspect of the car.

What's a good stand alone engine management system and what am I looking at cost wise? What gains should I expect?

look around. there's the microtech, haltech, AEM mainly. Cost 800-2000.

I'd stick w/bolt-ons or a turbo kit.

you will not make huge power with just an EMS.

the point of an EMS is to replace most of your stock ECU controls, so that you can fine tune certain parameters; things like timing, air/fuel, boost if you have a turbo, injectors, etc, so that at different rpms, you can achieve maximum potential of your engine.

if you are looking for an increase in power, get all of the mods first, intake, turbo, exhaust, cams, whatever..... then get an EMS system to tune it all together.
